Spicy Turkey & Veggie Meatballs

So I was craving some spaghetti and meatballs today! I wanted to experiment with a spicier version of the meatballs I usually make, so I added a jalapeno! I also happened to have a container of Trader Joe's Mirepoix in my fridge so I tossed that in. It was convenient, healthy and added great flavor! You can always substitute this with your favorite veggeis. These meatballs came out deeeelicious! My brother and I paired it with some gluten free pasta and devoured it all in a second. lol! This is a really easy recipe and great way to spice up your dinner! Try this recipe out! You won't be disappointed!

Ingredients
2 tablespoon olive oil
½ white onion, chopped
3 carrots, diced
3 celery stalks, diced
6 garlic cloves, minced
1 jalapeno pepper, chopped
1-pound ground turkey
½ cup Italian style breadcrumbs
1 egg
1 tablespoon Herbes de Provence or Italian seasonings
11/4 teaspoon salt or to taste
1/4 cup grated parmesan cheese
16 ounces of your favorite marinara sauce.
1 tablespoon of chopped parsley or basil for garnish.
Preheat oven to 425 degrees F. Line a baking sheet with aluminum foil and spray with a non-stick cooking spray.
Instructions
In a saute pan, heat olive oil over medium high heat.
Add onion, carrots, celery, garlic, and jalapeno and 1/4 teaspoon of salt and saute until vegetables are soft and onions begin to turn translucent, about 7 minutes. Let cool.
In a large bowl, combine ground turkey, breadcrumbs, parmesan, Herbes de Provence, egg, remaining 1 teaspoon of salt and sauted vegetables. Mix well, I use my hands to make sure all ingredients are evenly incorporated.
Take mixture and form 12-15 meatballs, placing them on your prepared cooking sheet.
In a cast iron pan heat olive oil and cook meatballs 2 minutes per side to form a crunchy crust.
Transfer meatballs back to baking sheet. Bake for 18-20 minutes, flipping halfway through.
Heat marinara sauce and add in the meatballs.
Garnish meatballs with parsley or basil.
Enjoy the meatballs on their own or pair with your favorite pasta.
