Indian Spiced Beets

Indian spiced Beets? Yes, please! My mom use to make Indian spiced beets all the time when I was growing up. They’re such a great source of fiber, vitamin C, potassium, manganese and vitamin B6!!! As a kid I had no idea they had so many health benefits. I just loved how yummy they tasted! The browned onions and beets have a nice sweet flavor and the freshly ground black pepper give it just the right flavorful kick. This recipe is a really quick and easy way to jazz up beets. There are only a handful of ingredients and you have a delicious healthy meal in 20 minutes. I usually eat the spiced beets with roti or basmati rice. Today I wanted to keep things light and fresh, so I added them to a nice crisp salad instead! The beets had so much flavor I didn’t need to add any salad dressing!!! Check out the recipe below!

Ingredients:
1 cup onion, finely diced
1 cup beetroot, largely diced or desired shape
1/2 teaspoon salt, divided (1/4 teaspoon with onion, 1/4 teaspoon with beets)
2 teaspoons freshly ground black pepper
1/4 teaspoon turmeric powder
2 tablespoons extra virgin olive oil
Instructions:
Add oil, onion and 1/4 teaspoon of salt to a pan on medium low heat. Brown onions. (about 15minutes)
Add beetroot, remaining 1/4 teaspoon salt, pepper and turmeric powder.
Stir to combine and cook for 5 minutes.
Serve with roti, rice or a salad.
