Indian Spiced Roasted Butternut Squash

So I had some butternut squash in my fridge and I realized I’ve made butternut squash a ton of times, but I’ve never seasoned it with Indian spices. So I decided to have an afternoon of experimentation!!! I seasoned the butternut squash with my go to spices - cumin powder, coriander powder, turmeric powder and red chili powder. You can also never go wrong with onion and garlic, so I added those in too! I combined all of the ingredients together and tossed them in a sheet pan to roast for 30 minutes. I love roasting veggies! It brings out such great flavors and allowed the onions to get a really beautiful caramelization!!! You know how much I love my caramelized onions! I also love using roasting as a cooking method because you can literally set a timer and go do other things! Multitasking is the best!!! I got all of my laundry put away while the butternut squash cooked. My kitchen smelled so amazing!!! I was so happy with how delicious this recipe came out!!! Perfect way to add tons of flavor to some butternut squash! I ate it with some quinoa, but you could also eat it with rice, roti, with a side of yogurt or just on it’s own. Hope you try this recipe out and enjoy it as much as I did!!!

Ingredients
4 cups cubed butternut squash (about 24 ounces)
1 red onion, sliced
6 garlic cloves, sliced
2 serrano peppers, sliced
1 teaspoon mustard seeds
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon salt
1/4cup olive oil
1/3 cup fresh coriander, chopped
Instructions
Preheat oven to 400 degrees.
Combine all of the ingredients excepts for the fresh coriander.
Place combined mixture on a sheet pan. I like to cover the sheet pan with aluminum foil for easier clean up.
Roast in the oven for 30 minutes.
Remove from oven and cool for 5 minutes.
