Cauliflower with a Garlic Red Bell Pepper sauce

It's cauliflower time! I usually stick to traditional Indian flavors when I cook cauliflower, but I decided to change things up a bit. Instead of tomatoes I used red bell peppers and swapped out red chili powder with crushed red pepper flakes. I played around with the flavors some more and threw in some Italian breadcrumbs and sesame seeds. The results were delicious! Check out the recipe below!

Ingredients
4 tablespoons olive oil
1 small head cauliflower, cut into florets
1 1/2 teaspoons salt (or to taste)
1/2 teaspoon fresh ground pepper
4 cloves garlic, chopped
1 cup onion, diced
1 red pepper, seeded and chopped
1/2 teaspoon crushed red pepper flakes
2 tablespoons Italian breadcrumbs
1 tablespoon sesame seeds
1 tablespoon cilantro, chopped for garnish (optional)
Instructions
1. Heat 3 tablespoons of the olive oil in a large pan over medium heat and add the cauliflower florets. Season with 1/2 teaspoon salt and pepper. Cook the cauliflower for 10-15 minutes to soften.
2. While the cauliflower is cooking, heat the remaining 1 tablespoon olive oil in a medium pan over medium heat. Add the garlic, onion and 1/2 teaspoon salt, sauté for 5 minutes. Add the red bell pepper and remaining 1/2 teaspoon salt, sauté for another 5 minutes.
3. Transfer the sautéed garlic, onion and red bell pepper into a blender and puree until smooth.
4. Add the puree and the red pepper flakes to the cauliflower and cook for 2 minutes.
5. Stir in the breadcrumbs and sesame seeds, cook for another 2 minutes.
6. Transfer to a serving dish, garnish with cilantro and serve hot.
