I've gotten messages asking for some quick and healthy Indian inspired dishes — ask and you shall receive! I always have quinoa and fresh veggies on hand at home and I had some cans of chickpeas so I came up with this flavorful recipe! It’s easy to make and each serving is filled with fiber, protein and vitamins. The combination of quinoa, chickpeas and fresh vegetables makes it so nutritious!
