Turmeric Veggie Egg Muffins


I've partnered with a really great online Farmer's Market called Milk and Eggs. Ordering organic groceries through their site has saved me so much time! I love scrolling through and adding healthy yum yums to my cart and it's always fun to get things delivered lol! I ordered a lot of fresh organic produce with this shipment and I decided to do some meal prepping with it. I wanted to prep a breakfast item that I could quickly grab and go since mornings can get so hectic. I decided to do my own take on eggs my dad always makes on Sundays. My family calls them "pyaaz ka anda." In hindi “pyaaz" means onion and “anda" means egg, so we eat onion eggs! I took my dad's recipe and added a lot more veggies and more spices - particularly a lot more turmeric! Turmeric has so many health benefits! It's anti-inflammatory, it can relieve pain, it improves liver function and can aid in digestion! This is a healthy recipe that’s really easy to make!
