Chai Spiced Granola

This Indian girl like most South Asians in general has a chai obsession!!! There's always room for a cup of chai! I rarely drink just regular chai...I'm a sucker for masala chai! I love the flavors of cinnamon, cardamom, clove and ginger all slowly boiled together with the chai. I love experimenting and decided to take these chai spices I love so much and fuse them with other foods! It was a Sunday morning and I wanted a parfait. I had everything on hand to make granola so I decided to spice it up with chai flavors! I am sooo happy with how delicious this came out and the whole house smelled scrumptious!!! I had the granola with yogurt and some strawberries! It did not disappoint! I took some over to my parents house and they loved it too! My mom had it with some milk and my dad ate it as is. I put the leftovers in an airtight jar and have been eating it for the past week! Hope you enjoy this Indian spin on your everyday granola!

Ingredients:
3 cups rolled oats
1/2 cup vegetable oil
1/2 cup pure maple syrup
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 1/2 tsp cinnamon powder
1 teaspoon cardamom powder
1 teaspoon clove powder
1 teaspoon ginger powder
1 cup slivered almonds
1 cup pecans
1 cup dried cranberries
Instructions:
1. Preheat oven to 400º F.
2. In a large bowl whisk together the oil, maple syrup, vanilla extract, salt, cinnamon, clove and ginger.
3. Add in the rolled oats, almonds and pecans. Stir until combined.
4. Transfer mixture evenly on to sheet tray.
5. Place sheet tray in oven for 40 minutes, stir halfway through.
6. Remove from oven and transfer into a large bowl. Add cranberries and mix until evenly distributed.
